Rosé is the heart of the line up at the Corey Creek Tap Room, not only because I love making pink wine but because it opens up these grape varieties to new flavor profiles that aren’t expressed in a red wine. Most commercial Rosé wines are blends; making varietal rosé is a chance to see what Syrah, Malbec, and Cabernet Sauvignon can create on their own.
Hand crafting small-batch wines is no easy feat. It’s just as much work (if not more) than making larger batches of wine. The North Fork wine region is almost 50 years old with continuous innovation during the past 20 years. I don’t push the proverbial envelope just to be creative, I push it to see where these grapes can go while making the best wine possible.
